 Spicy Toasts

These crunchy toasts make an ideal snack or part of the brunch. They are especially served with grilled tomatoes.

Ingredients:

  •  4 eggs.
  • 300 ml milk.
  • 2 fresh green chilies, finely chopped.
  • 2 tsp fresh chopped coriander.
  • 75g grated mozzarella or cheddar cheese.
  • 1/2 tsp salt.
  • 1/4 tsp ground black pepper.
  • 4 slices bread.
  • corn oil, for frying.
Recipe:

  • Break the eggs into a medium bowl and whisk together. Slowly add the milk and whisk again. Add the chilies, coriander, cheese, salt and pepper, and mix well.
  • Cut the bread slices in half diagonally, and soak them, one at a time, in the egg mixture.
  • Heat the oil in the medium pan and fry the bread slices over a medium heat, turning them once or twice, until they are golden brown.
  • Drain off any excess oil as you remove the toasts from the pan, and serve immediately.
