Easy and healthy muffin recipe

MINI BERRY MUFFINS



When i was a child. Every Sunday my mom used to make these yummy, healthy and tasty muffins.This makes about 36 mini muffins and you can use raspberries, blueberries or blackberries.The mashed bananas replace some of the sugar you would usually add to muffins and makes them healthier.You could put some in the freezer as they defrost quickly for a breakfast treat.

Ingredients for mini berry muffins:

  • 125 g (4 oz) butter (softened)
  • 55 g (2 oz) soft brown sugar
  • 2 ripe bananas (mashed)
  • 2 eggs
  • 250 ml (1/ pint) milk
  • 250 g (9 oz) wholemeal flour
  • 3 teaspoons baking powder
  • 55 g (2 oz) porridge oats
  • 300 g (10 oz) berries

Recipe for mini berry muffins:

  1. Heat the oven to 180C, 350F or gas mark 4.
  2. Line a mini muffin tin with paper cake cases.
  3. Cream the butter and sugar until light and fluffy.
  4. Stir in the bananas, eggs, milk, flour, baking powder and oats. Mix together well.
  5. Gently fold in the berries.
  6.  Spoon into the cake cases and bake in the oven for 12-15 mins, or until golden brown.
  7. Leave to cool on a wire rack before serving or freezing.
