Spicy Toasts

 Spicy Toasts These crunchy toasts make an ideal snack or part of the brunch. They are especially served with grilled tomatoes. Ingredients:  4 eggs. 300 ml milk. 2 fresh green chilies, finely chopped. 2 tsp fresh chopped coriander. 75g grated mozzarella or cheddar cheese. 1/2 tsp salt. 1/4 tsp ground black pepper. 4 slices bread. corn oil, for frying. Recipe: Break the eggs into a medium bowl and whisk together. Slowly add the milk and whisk again. Add the chilies, coriander, cheese, salt and pepper, and mix well. Cut the bread slices in half diagonally, and soak them, one at a time, in the egg mixture. Heat the oil in the medium pan and fry the bread slices over a medium heat, turning them once or twice, until they are golden brown. Drain off any excess oil as you remove the toasts from the pan, and serve immediately.

 Spicy Chicken And Mushroom Soup The creamy chicken soup has just enough spice to make it a great winter warmer, but not so much that it overwhelms the flavor of the mushroom.  Ingredients: 225g boneless chicken, skinned. 75g/ 6tsp ghee or unsalted butter. 1/2 tsp crushed garlic. 1 tsp garam masala. 1 tsp crushed black peppercorns. 1 tsp salt. 1/4 tsp grated nutmeg. 1 medium leek, sliced. 1 cup mushroom, sliced. 50g/ 1 cup corn. 300ml water. 1 cup cream. 1 tsp chopped fresh coriander. 1 tsp crushed dried red chilies. Recipe: Cut the chicken pieces into very fine strips. Melt the ghee or butter in a pan. Lower the heat slightly and add the garlic and garam masala. Lower the heat even further and add black peppercorns, salt and nutmeg. Finally, add the chicken pieces, sliced leek, mushroom and corn, and cook, stirring constantly, for 5-7 mins, or until the chicken is cooked through. Remove from the heat and leave to cool slightly. Healthy Tomato & Coriander Soup  Since, winters are here and it is a great time to try something delicious, warm and healthy. So I am to let you guys know about this yummy soup. Ingredients: 675g tomatoes, peeled and chopped. 1 tsp oil. 1 bay leaf. 4 spring onions chopped. 1 tsp salt. 1/2 tsp crushed garlic. 1 tsp crushed black peppercorns. 2 tsp chopped fresh coriander. 750ml water. 1 tsp corn flour/corn starch. 2 tsp cream to garnish (optional). Recipe: To peel the tomatoes, plunge them in very hot water, leave for 30 seconds, then take them out. The skin should now peel off easily. If not, put the tomatoes back in the water for a little longer. Once they have been peeled, roughly chop the tomatoes.  In a medium, heavy pan, heat the oil and fry the tomatoes, bay leave, and spring onion for a  few        minutes until soft.   Gradually add the salt, garlic, peppercorns and  coriander, Pour in the water.
